This traditional Indian dish is a great way of cooking lentils. They are seasoned with cumin seeds, mustard seeds, ginger and fresh coriander. Enjoy with rice or naan bread.
Place lentils and water in a large saucepan. Bring to the boil over high heat. Reduce heat and skim off any scum that appears.
Add shallots, ginger, garlic, turmeric, salt and fresh chillies. Cook partially covered on medium-low heat for about 45 minutes or until dal reaches the desired consistency.
When dal is ready, heat the oil in a frying pan over high heat. Add dried chillies and fry until brown. Add the cumin seeds and mustard seeds. Heat until the seeds begin to pop.
Pour oil/seed mixture and coriander into the dal and cover immediately. Serve.
