Simple Butter Biscuits

    This versatile biscuit recipe can be transformed into any flavour biscuit you wish. Try adding chocolate chips, dried fruit or chopped nuts. They are buttery, sweet and delicious.

    Serves: 12 

    • 125g self-raising flour
    • 125g plain flour
    • 1/4 teaspoon salt
    • 1 egg
    • 125g butter or margarine, softened
    • 125g dark brown soft sugar

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with baking parchment.
    2. Cream together butter and sugar until light and fluffy.
    3. Add egg, flours and salt and mix together until mixture resembles fine breadcrumbs.
    4. Bring mixture together with hands and turn onto lightly floured surface.
    5. Roll mixture out to 3mm thick and cut into shapes. Transfer to prepared tray.
    6. Bake in preheated oven until brown, about 10 minutes.

    This recipe did not work for me. They fell, lumpy and flat, upon being exposed to heat and ended up pretty flimsy. Do not make these cookies; you stand warned.  -  20 Sep 2014
