Nacho Burgers

    Everything you love about nachos in a burger! Beef and bean burgers are sandwiched in buns with salsa, guacamole, cheese, lettuce and crumbled tortilla chips.

    Serves: 4 

    • For the Refried Bean Burger
    • 500g minced beef
    • 1 onion, finely chopped
    • 1 (415g) tin refried beans
    • 1 (30g) packet taco seasoning mix
    • 1 egg
    • 2 tablespoons plain flour, for dusting
    • For the Salsa
    • 4 plum tomatoes, thinly sliced
    • 1 red onion, thinly sliced
    • 2 tablespoons chopped Scotch bonnet chillies or to taste
    • 2 tablespoons finely chopped coriander
    • 1 clove garlic, crushed
    • 1 pinch salt and ground black pepper
    • For the Guacamole
    • 2 ripe avocados
    • 1 red onion, finely chopped
    • 1 clove garlic, crushed
    • 1 lime, juiced
    • 2 dashes Tabasco sauce
    • 1 pinch sea salt and freshly ground black pepper
    • To Assemble
    • 4 large sesame seed buns
    • 115g finely chopped iceberg lettuce
    • heated refried bean burgers
    • 4-8 tablespoons salsa
    • 4-8 slices cheese
    • 16-20 crumbled tortilla chips (about 4-6 per serving)
    • 4-8 tablespoons guacamole
    • extra sliced chillies and coriander leaves (optional to taste)

    1. To make the refried bean burgers: Combine beef, beans, onion, seasoning mix and egg. Take 1/4 of the mixture and form into a burger slightly larger than a burger bun. Dust lightly with plain flour. Repeat with remaining mixture. Cover and chill until needed.
    2. When ready, heat some oil in a large frying pan over medium heat. Shallow-fry burgers for 4-5 minutes on each side, turning once.
    3. To make the salsa: Combine tomatoes, red onion, chillies, coriander, garlic, salt and pepper. Chill until needed.
    4. To make the guacamole: Mash avocados until still slightly chunky. Add onion, lime juice, Tabasco, salt and pepper. Lightly stir to combine. Adjust seasonings to taste. Cover with cling film directly on the surface of the guacamole. This will prevent it from discolouring. Chill until needed.
    5. To assemble: Preheat a large frying pan over medium heat. Lightly butter the cut side of the buns and toast on the pan. Top base of buns with lettuce, burger, salsa, cheese, tortilla chips, guacamole and extra chillies and coriander. Enjoy!
