    About this recipe: This is a quick and easy salad, which tastes fantastic. Serve over chopped lettuce, use as a hearty sandwich filler or serve with crackers.

    Ingredients
    Serves: 6 

    • 1 (400g) tin tuna in brine, drained
    • 3 spring onions, finely sliced
    • 3 sticks celery, finely diced
    • 1 (198g) tin sweetcorn kernels
    • 125g coleslaw dressing, mayonnaise or dressing of your choice
    • 2 tablespoons finely grated fresh Parmesan cheese
    • salt to taste
    • pepper to taste
    • 2 tablespoons finely chopped coriander leaves

    Method

    1. Mix all ingredients in bowl and stir thoroughly
    2. Serve over finely chopped lettuce or in lettuce cups.

    Substitution

    You can add other finely chopped vegetables such as mange-tout, carrots or throw in a handful of sprouted seeds. An addition of finely chopped eggs also adds a special touch.

    Other ideas

    Wrap spoonfuls in lettuce leaves and secure with a cocktail stick for appetisers.
