Mayo-Free Potato Salad

    This potato salad is delicious whether it's served warm or cold. Potatoes are tossed with egg, bacon, spring onions and soured cream.

    Serves: 8 

    • 3 large potatoes, peeled and cubed
    • 3 eggs
    • 2 rashers bacon, sliced
    • 3 spring onions, finely sliced
    • 250ml soured cream
    • butter for frying

    1. Cook potatoes in boiling water until soft (but not mushy), drain.
    2. Meanwhile, boil eggs for 15-20 minutes. Cool under running tap, then peel and slice.
    3. Heat some butter in a large frying pan. Fry bacon until nearly crispy.
    4. In a large bowl, toss potatoes, eggs, bacon and spring onions together. Stir in soured cream and mix well. Serve either warm or cold.
