    About this recipe: These hearty oat cookies taste like Christmas. They are spiced with cinnamon, cloves and orange zest. Enjoy with a mug of tea or pop into packed lunches.

    Serves: 12 

    • 1 egg
    • 115g margarine
    • 110g dark brown soft sugar
    • 100g caster sugar
    • 1/2 teaspoon vanilla extract
    • 125g self-raising flour
    • 1/2 teaspoon ground cinnamon
    • 1/8 teaspoon ground cloves or 1/4 teaspoon ground nutmeg
    • 125g quick cooking oats
    • 125g sultanas
    • 1 small orange, zest grated

    1. Preheat oven to 200 C / Gas 6. Line baking trays with baking parchment.
    2. Cream together egg, margarine, sugars and vanilla extract until well mixed.
    3. Mix in flour, spices, oats, sultanas and orange zest until combined.
    4. Drop by teaspoonful onto lined baking trays. Allow room for spreading. Bake for 14-17 minutes until light golden brown. Allow to cool on trays.
