Parsley Salad with Bulgur

    This is a nutrient-rich salad, which is bursting with vibrant flavour. Parsley is tossed with lemon juice soaked bulgur, olive oil and seasonings.

    Serves: 2 

    • 2 tablespoons bulgur wheat
    • 1 lemon, juiced
    • 1/2 bunch parsley, finely chopped
    • 1 tablespoon olive oil
    • 1 teaspoon apple cider vinegar
    • salt and pepper

    1. Place bulgur wheat in a bowl, pour over lemon juice and leave for 2 hours. Add a few teaspoons of water if its looking dry.
    2. Drain bulgur when soft. Add parsley, oil and vinegar. Toss. Season with salt and pepper. Serve at room temperature.
