Prawn and mushroom pasta


    A simple pasta dish, which is packed full of delicious flavours and textures. Sauteed courgette, mushrooms, spinach and prawns are tossed with pasta.

    Serves: 2 

    • 200g penne pasta
    • 100g frozen shelled prawns
    • 1 clove garlic, sliced
    • 200g mushrooms, thinly sliced
    • 1/2 courgette, thinly sliced
    • 1 handful spinach leaves
    • chopped parsley to taste
    • 1 splash dry white wine or to taste
    • sliced chillies to taste
    • olive oil for frying
    • salt
    • 1/2 cube vegetable stock (optional)
    • grated Parmesan cheese

    1. Heat olive oil in a frying pan. Saute garlic for 1 minute. Add prawns and saute with white wine for 2 minutes. Stir in mushrooms, courgette, spinach, parsley, chilli and stock cube.
    2. Cook for 10-15 minutes or until vegetables are cooked. If the pan dries out, add some boiling water.
    3. Meanwhile, bring a large saucepan of salted water to the boil. Cook pasta according to packet's instructions. Drain.
    4. Toss pasta with prawns and serve with grated Parmesan.
