A simple pasta dish, which is packed full of delicious flavours and textures. Sauteed courgette, mushrooms, spinach and prawns are tossed with pasta.

Ingredients
Serves: 2
200g penne pasta
100g frozen shelled prawns
1 clove garlic, sliced
200g mushrooms, thinly sliced
1/2 courgette, thinly sliced
1 handful spinach leaves
chopped parsley to taste
1 splash dry white wine or to taste
sliced chillies to taste
olive oil for frying
salt
1/2 cube vegetable stock (optional)
grated Parmesan cheese

Heat olive oil in a frying pan. Saute garlic for 1 minute. Add prawns and saute with white wine for 2 minutes. Stir in mushrooms, courgette, spinach, parsley, chilli and stock cube.
Cook for 10-15 minutes or until vegetables are cooked. If the pan dries out, add some boiling water.
Meanwhile, bring a large saucepan of salted water to the boil. Cook pasta according to packet's instructions. Drain.
Toss pasta with prawns and serve with grated Parmesan.
