About this recipe: This recipe is a little different from the average pavlova. Egg whites are beaten with sugar, cornflour, vanilla, vinegar and water. Once cooked and cooled, serve with whipped cream and fresh fruit.


Serves: 6 

  • 4 egg whites
  • 600g caster sugar
  • 2 dessertspoons cornflour
  • 2 teaspoons vanilla extract
  • 2 teaspoons vinegar
  • 90ml hot water

Prep:35min  ›  Cook:1hr30min  ›  Extra time:4hr cooling  ›  Ready in:6hr5min 

  1. Place all the ingredients into a bowl. Beat until the mixture forms peaks. Be patient, it will take a while.
  2. Preheat oven to 140 C / Gas 1. Grease a baking tray and sprinkle with water.
  3. Pour mixture onto prepared baking tray. (No need to flatten out as the mixture will spread).
  4. Bake for 1 hour 30 minutes, then turn oven off and leave until oven is cool. Decorate with cream and fruit

Beware - the amount of sugar is wrong! 600gms is way too much. I had a great recipe for meringue using cornflour and vinegar but lost it, so chose this recipe because it mentioned those two ingredients. Scraped off the fruit and cream and threw away the meringue. 200 gms is sufficient. - 24 Jun 2012
