Nutty pea salad

    This salad sounds a little unusual, but it tastes fantastic. It's also quick and easy to make. Peas are tossed with celery, crushed nuts and water chesnuts in a creamy dressing.

    Serves: 6 

    • 500g frozen peas
    • 4 sticks celery, chopped
    • 145g salted roasted peanuts, crushed
    • 130g macadamia nuts, toasted, crushed
    • 1 (227g) tin sliced water chestnuts, drained
    • For the Dressing
    • 200ml creme fraiche
    • 1 tablespoon soy sauce
    • 2 teaspoons sesame oil or to taste
    • 1/4 teaspoon honey or to taste
    • 1 teaspoon lime juice or to taste
    • 1 tablespoon chopped parsley

    1. Heat peas, drain under cool water.
    2. Combine celery, nuts, water chestnuts and peas in bowl. Toss with dressing.
