    About this recipe: A simple, yet delicious vegetarian pasta. Penne is tossed with sauteed garlic, cherry tomatoes, black olives and basil pesto. Easy and very yummy!

    Serves: 2 

    • 80g penne
    • 2 tablespoons olive oil
    • 1 clove garlic, chopped
    • 75g cherry tomatoes, halved
    • 1 tablespoon pitted black olives, halved
    • 1 tablespoon basil pesto

    1. Cook the penne in salted boiling water. Meanwhile, heat the olive oil and garlic in a pan over low heat.
    2. Drain pasta and add to the pan with garlic. Stir in tomatoes, pesto and olives to heat through. You can also add pine nuts if you wish.
    3. Serve in bowls, with a little grated Parmesan, if desired.
