Cherry Tomato and Olive Penne

    A simple, yet delicious vegetarian pasta. Penne is tossed with sauteed garlic, cherry tomatoes, black olives and basil pesto. Easy and very yummy!

    • 80g penne
    • 2 tablespoons olive oil
    • 1 clove garlic, chopped
    • 75g cherry tomatoes, halved
    • 1 tablespoon pitted black olives, halved
    • 1 tablespoon basil pesto

    1. Cook the penne in salted boiling water. Meanwhile, heat the olive oil and garlic in a pan over low heat.
    2. Drain pasta and add to the pan with garlic. Stir in tomatoes, pesto and olives to heat through. You can also add pine nuts if you wish.
    3. Serve in bowls, with a little grated Parmesan, if desired.

    Really like this dish. However, I don't eat huge amounts and I almost polished the lot off for dinner so if there was two of me I'd probably add another couple of handfuls of pasta and double the tomatoes. If you are sticking to the portions prescribed, I'd only use one tablespoon of olive oil as the pesto adds even more. Really nice and simple AND very tasty. Totally recommended  -  12 Nov 2013
