Grilled peppers with feta

    This is a really tasty side dish. Peppers are stuffed with feta, tomato, onion and parsley, then grilled to perfection. Simple and delicious.

    Serves: 8 

    • 8 romano peppers
    • 125ml olive oil
    • 1 large onion, grated
    • 1 large tomato, finely chopped
    • 1 tablespoon finely chopped parsley
    • 200g feta cheese, coarsely chopped
    • olive oil
    • oregano
    • ground pepper

    1. Wash peppers, cut off tops and carefully remove seeds without tearing skin. Poach peppers in boiling water for 5 minutes. Drain and set aside to cool.
    2. Meanwhile, saute onions in olive oil. Add tomato, ground pepper and oregano. Stir and remove from heat. Let cool slightly, then stir in feta and parsley.
    3. Fill peppers with mixture. Brush peppers with oil then grill or fry, turning until all sides are browned. Serve hot.
