Beef and Pork Meatloaf

About this recipe: This meatloaf is exceptionally tasty. It is basted with a homemade BBQ sauce whilst being baked. It's perfect for dinner or in sandwiches.


Serves: 6 

  • 600g lean minced beef
  • 600g sausagemeat
  • 110g fine breadcrumbs
  • 2 medium onions, finely chopped
  • 1 tablespoon curry powder
  • 125ml water
  • 1 tablespoon chopped parsley
  • 1 egg, beaten
  • 1 clove garlic, crushed
  • 125ml milk
  • salt and pepper to taste
  • For the Sauce
  • 1 onion, very finely chopped
  • 30g butter or margarine
  • 125g tomato ketchup
  • 4 tablespoons red wine or beef stock
  • 4 tablespoons Worcestershire sauce
  • 4 tablespoons dark brown soft sugar
  • 4 tablespoons water
  • 2 tablespoons vinegar
  • 1 tablespoon instant coffee powder
  • 2 teaspoons lemon juice

  1. To make the meatloaf: Combine beef, sausagemeat, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in a large bowl. Mix well.
  2. In a small bowl, mix together milk and water. Gradually add to meat mixture, a little at a time until it is smooth but firm. Shape into a loaf and place into a greased baking tin.
  3. Bake for 30 minutes at 190 C / Gas 5. While the meatloaf is cooking, make up the sauce.
  4. To make the sauce: Saute the onions in butter until golden. Add the tomato ketchup, wine, Worcestershire sauce, dark brown soft sugar, water, vinegar, coffee and lemon juice. Bring slowly to the boil, lower heat and simmer for 10 or so minutes.
  5. After the meatloaf has cooked for 30 minutes, pour half the sauce over the meatloaf, return it to the oven and bake for another 45 minutes, basting often with remaining sauce.
  6. Serve the loaf hot with tomato sauce or the remaining sauce.
