Seafood medley pizza

    A ready-made pizza base is topped with a cherry tomato sauce, cheese and seafood mix. Serve for lunch or dinner with a side salad, if desired.

    Serves: 4 

    • 1 thin pizza base
    • 400g cherry tomatoes
    • 250g seafood mix
    • 125g grated mature Cheddar cheese
    • 1 tablespoon olive oil
    • 1 tablespoon dried basil
    • 1 tablespoon sweet chilli sauce
    • 1 teaspoon crushed garlic
    • 3 anchovies
    • 2 tablespoons fresh oregano

    1. Preheat oven to 220 C / Gas 7. Line a pizza pan with baking parchment and spray with oil. Place pizza base onto pan and set aside.
    2. Heat olive oil in frying pan. Add garlic, anchovies, sweet chilli sauce, basil and cherry tomatoes. Bring to the boil, then simmer 10 to 15 minutes until sauce reduces and thickens. Remove from heat and allow to cool slightly.
    3. Spread sauce over pizza base top with grated cheese. Scatter seafood mix on top and sprinkle with fresh oregano.
    4. Bake for 10 to 12 minutes until cheese has melted and cherry tomatoes have a slightly burnished look. Serve.
