About this recipe: This fruity sauce is simple to make and tastes fabulous. Use as a marinade, basting sauce or condiment.


Serves: 20 

  • 1kg dark plums, stones removed and chopped
  • 1kg caster sugar
  • 670g dark brown soft sugar
  • 500g black treacle
  • 3 litres vinegar
  • 85g garlic
  • 1 1/2 tablespoons salt
  • 20g white pepper
  • 20g whole cloves
  • 3/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons ground ginger

  1. Put all ingredients in a large pot. Cook until plums are soft, then strain. Boil strained liquid for 1 hour. Leave until cold.
  2. Pour into clean, dry bottles.
