About this recipe: Mashed potatoes are seasoned with fresh parsley and feta cheese. The mixture is then rolled into balls and pan-fried to perfection. Serve as a side dish or part of a meze meal.


Serves: 6 

  • 1kg potatoes
  • 1 small bunch parsley, finely chopped
  • 2 eggs, lightly beaten
  • 200g feta cheese, crumbled
  • salt and pepper
  • flour for rolling
  • oil for frying

  1. Scrub potatoes and boil in their skins. Remove skin and mash. Add parsley, eggs, feta, salt and pepper. Combine thoroughly.
  2. Shape mashed potato mix into walnut-sized balls, roll in flour and fry until golden.
