    About this recipe: These sandwiches are perfect for lunch or a snack. Lime-marinated prawns are sandwiched between lime-mayonnaise slathered bread.

    Serves: 4 

    • 24 raw prawns, shelled and deveined
    • extra-virgin olive oil
    • 2 limes, zested and juiced
    • 1 bunch coriander
    • 2 tablespoons mayonnaise
    • 10 slices good quality white bread

    1. Marinate the prawns in half the lime juice and olive oil for 1 hour.
    2. Meanwhile, combine mayonnaise, lime zest and the rest of the lime juice in a bowl; stir well.
    3. Chop the coriander being careful not to bruise it.
    4. Cook the prawns lightly in a frying pan with some olive oil and the marinade until they have just curled.
    5. Spread both the top and bottom slices of bread with the lime/mayonnaise mixture, then add prawns and a few coriander leaves. Slice crusts off for presentation and transfer to a serving plate.
