    About this recipe: These rolls are incredibly tasty. They have the perfect combination of flavours and textures. Prosciutto is wrapped around a mixture of goat cheese, basil, garlic and pine nuts. Serve as a starter or appetiser.

    Ingredients
    Serves: 4 

    • 110g soft goat cheese
    • 5 tablespoons finely chopped basil leaves
    • 1 garlic clove, crushed
    • 4 large, thin slices prosciutto, halved lengthways
    • 1 char-grilled red pepper, cut into strips
    • 65g toasted pine nuts
    • 1 tablespoon olive oil

    Method

    1. Combine goat cheese, basil, pine nuts and garlic in a bowl and season with pepper.
    2. Place prosciutto on a flat surface and place a heaped teaspoon of goat cheese mixture on one end. Top with pepper. Roll to enclose.
    3. Heat oil in a non-stick frying pan over medium heat. Cook parcels for 2-3 minutes each side, until golden and crisp.
    4. Serve warm or cold.
