Cumin Spiced Potato with Rice

    A simple, but elegant vegetarian meal. Potato and courgette are seasoned with cumin and fresh coriander, then served with rice.

    • 190g rice
    • 1 courgette, sliced
    • 1 potato, sliced
    • 4 sprigs rosemary
    • 2 sprigs thyme
    • 4 cloves garlic
    • 1 bunch coriander
    • 2 teaspoons ground cumin
    • salt to taste

    1. Cook rice according to packet's instructions.
    2. Place potato, courgette and 500ml water into a saucepan. Bring to the boil.
    3. Add garlic, rosemary and thyme.
    4. Once the water has evaporated and the potato is tender, add salt and cumin powder.
    5. Finely chop the coriander in a food processor and add to the saucepan.
