Creamy Crab Pasta Salad

About this recipe: Crab and pasta shells are tossed with a creamy seasoned sauce in this summer salad.

Serves: 8 

  • 3/4 (500g) pack conchiglie rigate (pasta shells)
  • 100ml (4 fl oz) half fat soured cream
  • 100ml (4 fl oz) light mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 tablespoon honey
  • 1/2 tablespoon mustard
  • small handful chopped fresh dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 450g (1 lb) cooked crab meat
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • handful chopped spring onions

  1. Cook pasta according to pack instructions; drain and set aside to cool.
  2. In a bowl, blend the soured cream, mayonnaise, lemon juice, honey, mustard and dill. Season with salt and pepper.
  3. In a large bowl, toss together the cooked pasta, soured cream mixture, crab meat, red pepper, green pepper and spring onions. Cover and chill until serving.
