Bolognese Stuffed Potato Skins

    This is a super-easy recipe that is guaranteed to satisfy. Potato skins are stuffed with a simple, yet delicious filling of beef bolognese and a dollop of cheese sauce.

    Makes: 12 stuffed potato skins

    • 6 large potatoes
    • 700g minced beef
    • 500g pasta sauce, such as Dolmio's bolognese sauce
    • cheese sauce, as needed

    1. Stab the potatoes with a fork and place onto a microwave-safe dish. Cover with cling film and microwave on high for 3 minutes. Turn the potatoes and repeat until the potatoes are cooked.
    2. Meanwhile, brown the minced beef in a frying pan. Add the pasta sauce and mix.
    3. Cut the potatoes in half and hollow out the centre. Fill the potato skins with the beef mixture and top with a good dollop of cheese sauce.
    4. Bake in a preheated 180 C / Gas 4 oven for 30 minutes or until piping hot.

    Cook's note

    You can save the scooped out potato and make mash. Serve alongside the stuffed potato skins, if desired.
