Sweet Rum Bites

    This is a simple, yet delicious, no-bake sweet recipe. Biscuit crumbs are combined with condensed milk, rum-soaked sultanas and cocoa powder, formed into balls and rolled in coconut.

    Serves: 10 

    • 165g sultanas
    • 125ml rum
    • 250g Rich Tea® biscuits (or other plain biscuits), crushed
    • 1 (397g) tin condensed milk
    • 2 heaped tablespoons unsweetened cocoa
    • desiccated coconut, for rolling

    Prep:2hr20min  ›  Extra time:8hr soaking  ›  Ready in:10hr20min 

    1. Stand sultanas in rum overnight.
    2. Mix the crushed biscuits, soaked sultanas, condensed milk and cocoa in a large bowl. Chill for 2 hours.
    3. Using your hands, form small balls of the mixture and roll in desiccated coconut.
    4. Keep refrigerated.

    Very easy to make. Family loved them but I think next time that I will Make these rum balls I'll add in some cherries. Also I'm not a big coconut fan so I made the first batch with chocolate sprinkles but yes I'll definitely do this recipe again but my way 😉  -  09 Nov 2014
