Low-Fat Vegetable Broth

    This is a super-light, low calorie vegetable soup. Celery is simmered with carrots, onions and green beans in a chicken stock. Enjoy as a light lunch or dinner.

    Serves: 2 

    • 120g celery, chopped
    • 60g carrots, chopped
    • 80g onion, chopped
    • 150g green beans, cut
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried sage
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon garlic granules
    • 4 cubes chicken stock
    • 1.5 litres water

    1. Bring the water and stock cubes to the boil in a large stock pot.
    2. Add the celery, carrots, onions, green beans, basil, sage, thyme and garlic granules.
    3. Bring the mixture back to the boil and cook for an additional 15 minutes or until the vegetables are tender.
