Beef and Sausage Chilli

    This is a hearty one-pot creation, which will satisfy everybody. Beef mince is simmered with chorizo sausage, kidney beans and red pepper in a well-seasoned tomato sauce. Enjoy with rice, over a jacket potato or with corn bread.

    Makes: 4 - 6 servings

    • 2 tablespoons olive oil
    • 700g minced beef
    • 2 fresh chorizo-style sausages, cut in half, then sliced
    • 1 (400g) tin kidney beans, rinsed and drained
    • 1 (400g) tins chopped tomatoes
    • 1 red pepper, seeded and diced
    • 1 medium onion, diced
    • 1 dessertspoon ground coriander
    • 1 dessertspoon ground cumin
    • 1 dessertspoon curry powder
    • 1 dessertspoon chilli powder
    • 2 cloves garlic, crushed
    • 140g tomato puree
    • 125ml beef stock
    • 125ml red wine
    • salt and pepper to taste

    1. Heat oil in a large frying pan. Add onion, garlic, chorizo sausages, pepper and spices; cook stirring until onion is soft.
    2. Add beef; cook stirring, until beef has changed in colour.
    3. Add tomatoes, kidney beans, tomato puree and red wine and beef stock. Season with salt and pepper to taste
    4. Simmer for about 15 minutes or until mixture thickens.

    This recipe is so easy. The only change I made was I used Salsa because I had no tomato paste. Even better the next day.  -  01 Nov 2016  (Review from Allrecipes AU | NZ)
