Vegetable Stuffed Beef Sausages

    This is a creative way of getting children to eat a few vegetables. Par-boiled beef sausages are stuffed with sauteed vegetables, topped with cheese, then grilled to perfection.

    Serves: 6 

    • 500g beef sausages
    • 1 tablespoon olive oil
    • 1 onion, diced
    • 1 green pepper, diced
    • 2 tomatoes, diced
    • salt and pepper to taste
    • 250g sliced cheese

    1. Heat the oil in a large frying pan. Once hot, saute the onion, green pepper, tomatoes and salt and pepper until soft.
    2. Meanwhile, boil sausages until cooked, remove from heat and let cool.
    3. Preheat the grill.
    4. Cut a slit in middle of each sausage (like a pocket) and fill with the vegetables.
    5. Arrange sausages on a grill pan and top each with a slice of cheese. Grill until the cheese has melted.
