Slimmer's Delight Soup

    This vegan-friendly soup is packed full of vitamins and nutrients. It's also low in fat, low in calories, but not on taste. Feel free to use any vegetables you have lying around.

    Ingredients
    Serves: 6 

    • 750ml tomato juice
    • 275g diced tomatoes
    • 60g diced celery
    • 210g diced cabbage
    • 80g diced onion
    • 100g diced carrot
    • 120g diced green pepper
    • 25g chopped fresh parsley
    • garlic, crushed to taste
    • dried basil, to taste

    Method
    Prep:30min  ›  Cook:2hr  ›  Ready in:2hr30min 

    1. Place the tomatoes, celery, cabbage, onion, carrot, green pepper, tomato juice, garlic and dried basil in a large pot.
    2. Bring the mixture to the boil, then simmer for at least 2 hours. NOTE: The longer this soup cooks, the better it will taste.

    This soup was simple to make and quite tasty. Added some pepper, basil and bay leaves to enhance the flavours. Was quite hearty.  -  04 May 2013  (Review from Allrecipes AU | NZ)
