About this recipe:This great winter dish will warm the cockles of your heart. Layers of beef silverside, potatoes and carrots are cooked to perfection in the slow cooker.
1 knob butter
900g beef silverside, thickly sliced
4 to 5 large potatoes, thickly sliced
5 carrots, cut on the diagonal
salt and pepper to taste
1 litre beef stock
250ml red wine
2 (400g) tins chopped tomatoes
dried herbs to taste

Preheat the slow cooker. Put a knob of butter in the bottom of the dish.
Lay 2 pieces of silverside on the bottom of the dish and season. Top with a layer of potatoes and carrots; season. Repeat until the beef and vegetables have been used up. Pour in the stock, wine, tomatoes and herbs.
Cover the slow cooker and cook on High for 6 hours or until the beef is tender.
Serve with salad or fresh ciabatta to soak up the juices.
