100-120gsliced smoked salmon
250gbaby fennel, green tops removed and reserved, thinly sliced
Combine sliced fennel, fennel leaves, lemon juice, salt and pepper in a bowl. Mix well using your hands. Let sit for 5 minutes or until fennel is slightly softened.

Divide the smoked salmon onto three plates. Arrange the lemon-seasoned fennel on the top or the side. Sprinkle with chopped dill and drizzle with olive oil.
