About this recipe: These cookies are soft, chewy and totally moreish. The cookie dough is enriched with peanut butter, desiccated coconut and chocolate chips.


Serves: 4 

  • 170g unsalted butter, at room temperature
  • 1 tablespoon peanut butter
  • 330g dark brown soft sugar
  • 2 eggs
  • 1 tablespoon vanilla sugar
  • 1 teaspoon salt
  • 315g plain flour, sifted
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 75g desiccated coconut
  • 175-250g chocolate chips

  1. Preheat the oven to 180 C / Gas 4. Line baking trays with baking parchment.
  2. In a large mixing bowl, beat the egg and sugar until creamy, then add the softened butter and beat until smooth. Beat in the vanilla extract.
  3. In a separate bowl sieve together the flour, baking powder, bicarbonate of soda and salt. Mix well.
  4. Gradually mix the wet ingredients into the dry ingredients and combine well. Add the coconut and chocolate chips.
  5. Using a measuring spoon, place golf ball-sized portions onto prepared baking trays.
  6. Bake for 10 minutes or until golden. Remove and let cool.

what a yummi recepie!! Thanks for sharing it, one leads to another... my kids kept making yummi noises after each bite! I would probably try less sugar next time but still gorgeous! Didnt see when to put the peanut butter so I put it at the end, with choco chips! - 22 Nov 2010
