About this recipe:There's nothing quite like a rich, dense and fudgy homemade brownie. These brownies are made with dark chocolate and cherries. For a really decadent dessert, serve warm with vanilla ice cream.
Makes: 24 small brownies
100g dark chocolate
100g salted butter
200g caster sugar, sifted
1 vanilla pod, seeds only
125g plain flour
1/2 teaspoon baking powder
4 tablespoons unsweetened cocoa powder
200g tinned cherries, drained
200g dark chocolate chips

Preheat oven to 160 C / Gas 2 1/2. Grease and line a 18x28cm or similar sized baking tin with baking parchment.
Melt the butter and 100g chocolate over low heat in a small saucepan, stirring to combine. Let cool.
Beat the eggs with vanilla pod seeds and caster sugar. Gradually stir in the cooled chocolate mixture until well combined.
Sieve together the flour, baking powder and cocoa. Fold into the chocolate mixture using a cutting motion. Try not to beat the mixture.
Gently fold in the cherries and chocolate chips and pour into baking tin.
Bake for 25-30 minutes or until just set. A knife inserted into the centre should come out sticky but not liquid.
Let brownies cool in the tin before removing them. Cut into 4x6cm pieces and enjoy.
turned out fantasticly gooey on the inside and wonderfully crispy on the outside very easy in terms of using up what i had in the cupboards i also added a few almond chips will definitely be making them again! - 26 Feb 2012
