Low-Fat Spice Cake

    This cake is simple and delicious. It's not only low in fat, but it's also vegan-friendly. Cinnamon and mixed spice grace this cake, giving it a wonderful warmth.

    Serves: 12 

    • 250g self-raising flour
    • 150g dark brown soft sugar
    • 4 tablespoons golden syrup
    • 250ml milk
    • 2 teaspoons ground cinnamon
    • 2 teaspoons mixed spice
    • 1 pinch salt

    Prep:30min  ›  Cook:1hr  ›  Ready in:1hr30min 

    1. Preheat oven to 180 C / Gas 4. Grease a loaf tin.
    2. Sieve flour into bowl, add dark brown soft sugar, golden syrup, cinnamon, mixed spice and salt.
    3. Add milk and mix to combine.
    4. Pour into a loaf tin. Bake in preheated oven for 60-70 mins.

    How is this vegan friendly when there's milk in it? can you use soya milk or rice milk?  -  06 Nov 2012


    I'm so glad I tried this recipe, not only is it super simple to make but it tastes fab too. I used dark muscovado sugar instead and baked in a 7x7 cake tin, which took about 30 minutes to cook. Would highly recommend this recipe to everyone.  -  18 Dec 2011


    Really easy to make. I added a teaspoon of baking powder to the recipe too.Tastes lovely-added an extra kick of mixed spice/cinnamon to the recipe to enhance the flavor.Outer edges slightly chewy in texture but I like that!  -  13 Apr 2013
