Spicy Chicken and Rice Bake

    This is a hearty chicken dish, which is quick and easy to make. Chicken is baked with tomatoes, chilli and rice. It's really that simple. Enjoy during the cold winter months.

    Serves: 4 

    • 6-8 skinless, boneless chicken thighs
    • 1 (400g) tin chopped tomatoes with chilli
    • 375g white rice
    • salt and pepper to taste
    • 1 teaspoon crushed chillies

    1. Preheat oven to 180 C / Gas 4.
    2. Place chicken thighs in a large baking dish, spacing them apart slightly. Season with salt and pepper.
    3. Scatter the chopped tomatoes over the chicken and bake for 15 minutes.
    4. Add the rice and stir into the chicken juices. Add an additional 625ml hot water. Cover with foil.
    5. Bake for another 20-25 minutes or until the rice is cooked.
