    About this recipe: A delicious thick and creamy dressing - great for salads which consist mostly of greens. I also like it on a jacket potato. You can vary the taste by trying different types of vinegar.

    Ingredients
    Serves: 16 

    • 1 (280g) tofu
    • 5 tablespoons olive oil
    • handful chopped fresh basil
    • 1/2 teaspoon rice vinegar
    • 1/4 teaspoon salt
    • 3 teaspoons soy sauce

    Method

    1. Whisk together the tofu and olive oil until a thick mayonnaise-like consistency is reached.
    2. Add basil, vinegar, salt and soy sauce; mix well and refrigerate.

    Note:

    For best results, use soft tofu.

    Used different ingredients. This recipe wan't bad. I didn't have any fresh basil so I added some dry basil. The basil ended up being too strong. I think it might be good with another type of seasoning. The basic dressing wasn't bad though. - 24 Jul 2008

    Not only is this my new favourite salad dressing, it's good on turkey wraps on tortillas with fresh veggies. Creamy and light at the same time. Very fresh, clean taste. - 24 Jul 2008
