    About this recipe: These pastries are a little like mini sausage rolls, only with a vegetarian filling. Puff pastry is rolled with spinach, garlic and feta, then baked to perfection. They serve well as finger food or party nibbles.

    Ingredients
    Makes: 36 rolls

    • 2 tablespoons olive oil
    • 1 to 2 cloves garlic, finely chopped
    • 250g frozen spinach, thawed in a colander
    • salt to taste
    • 100g feta cheese, crumbled
    • 3 sheets puff pastry, thawed if frozen
    • 1 egg, mixed with 1 tablespoon milk
    • sesame seeds for sprinkling (optional)

    Method

    1. Preheat oven to 200 C / Gas 6.
    2. Fry garlic in 2 tablespoons oil for 2 minutes. Stir in spinach and cooked until warmed through. Season with salt and mix well. Transfer to a bowl and mix in the feta.
    3. Lay out one sheet of puff pastry and cut in half lengthways. Roll out a little if needed. You need enough width to fold it twice lengthways.
    4. Spread 1/6 of the filling down the length of the centre of the pastry. Roll one side over, brush the other side with egg and milk mix, then roll over again to seal.
    5. Brush the top of the roll with the egg/milk mix; sprinkle with sesame seeds, if desired. Cut into six mini rolls. Repeat with remaining sheets of puff pastry.
    6. Place the mini rolls onto a greased baking tray and bake in preheated oven for 20 to 25 minutes, or until the pastry is golden brown.

    A tasty alternative to the ubiquitous mini sausage roll at parties. These disappeared in a flash and I had to make a second batch because the one vegetarian for whom they were prepared arrived 10 minutes late and they were all gone! - 04 Feb 2012

    These went down a storm! I had no sesame seeds so I sprinkled fennel seeds on top instead. Will def make again for parties. - 22 Dec 2010

    Hi they sound great but the method doesn't mention when to put feta in I'm going to try them - 03 Dec 2012
