    About this recipe: This dish is packed full of protein and flavour. Butter beans are baked with cherry tomatoes, then served with slices of pan-fried steak.

    Serves: 4 

    • olive oil as needed
    • 2 (400g) tins butter beans, drained and rinsed
    • 1 garlic clove, thinly sliced
    • 1/2 teaspoon crushed chillies
    • 1 red onion, cut into thin wedges
    • 1 (250g) punnet cherry tomatoes
    • 1/2 teaspoon chicken stock granules
    • 4 (180g) beef sirloin steaks
    • balsalmic vinegar to serve
    • fresh oregano or coriander to serve

    1. Preheat oven to 200 C / Gas 6.
    2. Place the butter beans, cherry tomatoes (cut some in half and leave others whole), garlic, crushed chillies and onion in a baking dish.
    3. Drizzle with olive oil. Add 2 tablespoons water and chicken stock granules. Stir to mix. Cover loosely with foil.
    4. Bake in preheated oven for 25 minutes. Remove foil and bake for 5-10 minutes more or until onion is tender and tomatoes are soft.
    5. When the beans are nearly done, heat a frying pan with a little olive oil. Fry the steaks for 3-4 minutes per side for medium. Cover with foil and let rest for 5 minutes.
    6. To serve, arrange the beans and tomatoes on plates. Top with sliced steak, oregano and a splash of balsamic vinegar.

    It was all good-a great mix of meat and vegetables.. i just cooked the steaks in the frypan (heavy bottomed, cast iron) and they were fine. Served with mashed potatoes...I feel a new favourite coming on.  -  15 Mar 2009  (Review from Allrecipes AU | NZ)
