Salmon Fillets with Mango Salsa

    The salsa is the star of this dish. It creates a flavour-explosion in your mouth. Steamed salmon is served with a salsa made with mango, red onion, red pepper, garlic, coriander, mint, pickled ginger, chillies, lime juice and oil. For best results, make the salsa at least 24 hours in advance.

    Serves: 2 

    • 2 fillets salmon
    • 1 large ripe mango, diced
    • 1 red onion, diced
    • 1/2 red pepper, diced
    • 1 clove garlic
    • fresh coriander to taste, finely chopped
    • fresh mint to taste, finely chopped
    • 3 tablespoons pickled ginger, finely chopped
    • 1 tablespoon chopped chillies
    • 3 tablspoons lime juice
    • 5 tablespoons olive oil
    • salt and pepper to taste

    1. Place the mango, onion, pepper, coriander, mint, ginger, chillies, lime juice, oil and salt and pepper into an airtight container. Seal and refrigerate.
    2. Steam salmon fillets for approximately 20 minutes. Serve the mango salsa. Enjoy!


    If your local supermarket doesn't stock pickled ginger, you can find it in Chinese/Oriental speciality shops or online.
