Sweet 'n' Sticky Poussin

    A great little roast chicken dish, which is just enough to serve two people. A poussin is marinated in a honey-soy sauce marinade, then roasted to perfection. It's served with blanched asparagus and savoury rice.

    Serves: 2 

    • 1 poussin (small chicken)
    • 2 tablespoons honey
    • 4 tablespoons sweet soy sauce (kecap manis)
    • 2 tablespoons soy sauce
    • 1 teasoon sesame oil
    • 1 teaspoon finely chopped garlic
    • 1 tablespoons bacon bits
    • 1 tablespoon lime juice
    • 2 spring onions, thinly sliced and kept in icy water
    • 1 bunch asparagus, woody ends snapped off
    • 1 (120g) packet savoury rice

    1. Mix together the honey, sweet soy sauce, soy sauce, sesame oil, garlic, bacon bits and lime juice in a large bowl.
    2. Add poussin, cover with cling film and refrigerate overnight, turning occasionally.
    3. Preheat oven to 180 C / Gas 4.
    4. Place poussin in a lightly greased small roasting tin. Pour the marinade over and roast for 20-30 minutes.
    5. Meanwhile, blanch the asparagus in boiling water for 2-3 minutes. Set aside. Prepare the rice as per packet's instructions.
    6. Five minutes before the poussin is ready, add the asparagus to the roasting tin. The poussin is cooked when the juices run clear.
    7. Using kitchen scissors, cut poussin in half and serve with rice, asparagus and drained spring onions.


    Sweet soy sauce can be purchased in Chinese/Oriental speciality shops or online.
