Chicken and pepper curry

    This delicious curry is really easy to make. Chicken is simmered with onions and red pepper in a well-seasoned curry sauce. Serve alongside rice.

    Serves: 4 

    • 3 large chicken breast fillets, chopped into chunks
    • 1 onion, chopped
    • 1 red pepper, chopped
    • 2 tablespoons curry powder
    • 1 tablepoon plain flour
    • 500ml chicken stock
    • 1 tablespoon oil
    • rice to serve

    1. Heat oil in frying pan. When hot, add chicken, red pepper and onion.
    2. Cook, stirring until the chicken turns white.
    3. Reduce the heat in frying pan and add flour. Stir until combined with chicken mixture.
    4. Add curry powder, stir well until combined.
    5. Gradually stir in chicken stock, stirring continuously to prevent any lump formation.
    6. Reduce heat to low, simmer for 10-15 minutes.
    7. Serve with rice.

    Was in a hurry so gave this a try. Used yellow pepper and the curry powder was a good quality Madras. Does what it says on the tin but the result lacks taste sophistication as one might expect. Too much liquid so I thickened it but half the liquid might help. If you're into curry skip it but for a rapid job when you're lacking ingredients it works.  -  02 Nov 2011
