    About this recipe: This risotto has comfort food written all over it. Risotto rice is simmered with green pepper, peas and bacon. Serve with freshly grated Parmesan cheese.

    Serves: 4 

    • 300g Arborio (risotto) rice
    • 1 onion, chopped
    • 2 sticks celery, chopped
    • 1/2 green pepper, chopped
    • 75g frozen peas
    • 3 rashers bacon, chopped
    • 1 litre chicken stock
    • 40g grated Parmesan cheese
    • oil for frying
    • salt and pepper to taste

    1. Heat some oil in a large frying pan until hot. Fry onion until soft.
    2. Add bacon, pepper and celery and cook until bacon is crispy.
    3. Add rice and stir for 1 minute.
    4. Add stock and stir to mix. Simmer for about 20 minutes, stirring occasionally.
    5. When rice is creamy, turn off heat and add peas.
    6. Stand for a few minutes and serve sprinkled with cheese.
