Bacon and Pea Risotto

    This risotto has comfort food written all over it. Risotto rice is simmered with green pepper, peas and bacon. Serve with freshly grated Parmesan cheese.

    Ingredients
    Serves: 4 

    • 300g Arborio (risotto) rice
    • 1 onion, chopped
    • 2 sticks celery, chopped
    • 1/2 green pepper, chopped
    • 75g frozen peas
    • 3 rashers bacon, chopped
    • 1 litre chicken stock
    • 40g grated Parmesan cheese
    • oil for frying
    • salt and pepper to taste

    Method
    Prep:20min  ›  Cook:20min  ›  Ready in:40min 

    1. Heat some oil in a large frying pan until hot. Fry onion until soft.
    2. Add bacon, pepper and celery and cook until bacon is crispy.
    3. Add rice and stir for 1 minute.
    4. Add stock and stir to mix. Simmer for about 20 minutes, stirring occasionally.
    5. When rice is creamy, turn off heat and add peas.
    6. Stand for a few minutes and serve sprinkled with cheese.

    This wasn't bad. It was very easy to make, but not much in the way of flavour. I added chicken and cheese and found it quite nice. It's not something I would make for other people, but if I'm home alone and want something easy to make, I might make this again. Definitely not without the chicken and cheese though, without them I don't think it's nice at all.  -  10 Oct 2010  (Review from Allrecipes AU | NZ)
