White Chocolate and Berry Cupcakes

About this recipe: These delicious cupcakes take very little time to throw together. They are sweet, fruity and totally moreish. White chocolate chips and mixed berries grace these wonderful morsels.


Makes: 12 cupcakes

  • 115g unsalted butter, softened
  • 115g caster sugar
  • 115g self-raising flour
  • 2 eggs
  • 75g white chocolate chips
  • 75g mixed berries (fresh or frozen, but not thawed)
  • 1/2 tablespoons vanilla extract

Prep:15min  ›  Cook:20min  ›  Ready in:35min 

  1. Preheat oven to 180 C / Gas 4. Line a 12-hole cupcake tin with paper cases.
  2. Beat together the butter, sugar, flour, vanilla and eggs until well combined. Gently stir in the chocolate chips and berries.
  3. Divide the batter evenly in the prepared tin.
  4. Bake in preheated oven for 20 minutes or until a skewer comes out clean when inserted into the middle.
  5. Cool for 5 minutes (if you can wait that long) and enjoy!


Feel free to use any fruit instead of the mixed berries.
