About this recipe: This low fat, one-pot soup, is packed full of vegetables and all the good stuff. Carrots, cabbage, beans and celery are simmered in a seasoned tomato soup base.


Makes: 4 - 6 servings

  • 65g chopped carrots
  • 35g finely chopped cabbage
  • 115g tinned beans or peas
  • 65g chopped celery
  • 250ml beef stock
  • 350ml water
  • 270g tinned chopped tomatoes
  • 1/2 tablespoon finely chopped garlic

Prep:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Place everything into a large stock pot. Bring to the boil, then simmer for 30 minutes or until tender.
  2. Season to taste. Enjoy immediately. Store any leftovers in the refrigerator for up to a week.
