    About this recipe: No Christmas pudding is complete without brandy sauce! This sauce is a brandy flavoured custard, which is quick and easy to make and tastes fantastic.

    Ingredients
    Serves: 6 

    • 300ml milk
    • 1 egg, separated
    • 2 tablespoons sugar
    • 2 teaspoons custard powder
    • 1 tablespoon brandy

    Method

    1. Mix together the custard powder, sugar, egg yolk and a little milk in a bowl.
    2. Bring the remaining milk to the boil in a saucepan. Take off the heat and gradually stir in the blended custard powder.
    3. Return to heat, boil for 2 minutes, stirring constantly. Cool slightly.
    4. Beat egg white until stiff, then fold into cooled custard with brandy.
