No Christmas pudding is complete without brandy sauce! This sauce is a brandy flavoured custard, which is quick and easy to make and tastes fantastic.
1 egg, separated
2 tablespoons sugar
2 teaspoons custard powder
1 tablespoon brandy
- Mix together the custard powder, sugar, egg yolk and a little milk in a bowl.
- Bring the remaining milk to the boil in a saucepan. Take off the heat and gradually stir in the blended custard powder.
- Return to heat, boil for 2 minutes, stirring constantly. Cool slightly.
- Beat egg white until stiff, then fold into cooled custard with brandy.
