    About this recipe: The stewed tomatoes and chillies give this easy and tasty Creole chicken recipe it's kick, along with spices and veggies. Just put all ingredients into the slow cooker and let it simmer all day.

    Ingredients
    Serves: 4 

    • 4 skinless, boneless chicken breast fillets
    • salt and pepper to taste
    • Cajun seasoning to taste
    • 1 (400g) tin chopped tomatoes
    • 1 stalk celery, diced
    • 1 green pepper, diced
    • 3 cloves garlic, minced
    • 1 onion, diced
    • 100g (4 oz) mushrooms, sliced
    • 1 fresh green chilli, seeded and chopped

    Method
    Prep:10min  ›  Cook:12hr  ›  Ready in:12hr10min 

    1. Place chicken breasts in slow cooker. Season with salt, pepper and Cajun seasoning to taste. Stir in tomatoes, celery, green pepper, garlic, onion, mushrooms and green chilli.
    2. Cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.

    Don't be goin and puttin mushrooms in this recipe. First off, I don't like 'em. I had a bad experience with some mushroom tea and ain't liked the little veg since. Now, instead of sayin" to use any ol' cajun seasonin' insist on Tony Chachere's cajun seasonin'. www.tonychachere.com/ If'n you like your stuff hot-n-spicy a dash or 20 of Tobasco sauce'll light your fires nice'n good. Enjoy'n this little dish'd be plum good with good ol' fashioned corn bread. Look that up 'cause I'm gonna post it (eventually) and you gotta darn tootin good meal. Givin this dish an American label is too broad though. No siree Bob. This is pure N'awlins cajun stuff here. Btw, if'n you're ever in N'awlins, be christian neighborly and drop by the Acme Oyster House. You won't be dissapointed. I'm givin' ya 4 stars on account of I don't much like mushrooms.     Used different ingredients. Made my own cajun seasoning using: 2 tsps garlic powder, 2 tsps dried oregano, 2 tsps dried basil, 2 tsps dried thyme, 1 tsp black pepper, 1 tsp cayenne pepper, 2 tsps paprika, 2 tsps salt. - 17 Mar 2011

    ok add 2 teaspoons of paprika and 2 of cajun seasoning, use 2 cans of chopped tomatoes. Add juice of 1 lemon 30 mins before serving and add some hot sauce wqhen you plate it up. - 19 Mar 2011
