Don't be goin and puttin mushrooms in this recipe. First off, I don't like 'em. I had a bad experience with some mushroom tea and ain't liked the little veg since. Givin this dish an American label is too broad though. No siree Bob. This is pure N'awlins cajun stuff here. Btw, if'n you're ever in N'awlins, be christian neighborly and drop by the Acme Oyster House. You won't be dissapointed. I'm givin' ya 4 stars on account of I don't much like mushrooms. Used different ingredients. Made my own cajun seasoning using: 2 tsps garlic powder, 2 tsps dried oregano, 2 tsps dried basil, 2 tsps dried thyme, 1 tsp black pepper, 1 tsp cayenne pepper, 2 tsps paprika, 2 tsps salt. - 17 Mar 2011
ok add 2 teaspoons of paprika and 2 of cajun seasoning, use 2 cans of chopped tomatoes. Add juice of 1 lemon 30 mins before serving and add some hot sauce wqhen you plate it up. - 19 Mar 2011
