Creole Chicken in the Slow Cooker

The stewed tomatoes and chillies give this easy and tasty Creole chicken recipe it's kick, along with spices and veggies. Just put all ingredients into the slow cooker and let it simmer all day.

Ingredients

  • 4 skinless, boneless chicken breast fillets
  • salt and pepper to taste
  • Cajun seasoning to taste
  • 1 (400g) tin chopped tomatoes
  • 1 stalk celery, diced
  • 1 green pepper, diced
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 100g (4 oz) mushrooms, sliced
  • 1 fresh green chilli, seeded and chopped

Preparation method

  1.   Place chicken breasts in slow cooker. Season with salt, pepper and Cajun seasoning to taste. Stir in tomatoes, celery, green pepper, garlic, onion, mushrooms and green chilli.
  2.   Cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.

    I missed out mushrooms as my daughter doesn't like them, tasted lovely she said. She thought i'd opened a jar of sauce for the chicken!

    Not too impressed with this one. sauce too tomatoey and pretty tasteless. just tasted of chilli spices. wouldn't make it again I'm afraid
