Warm Spicy Beef Sandwiches

    These hearty filled bread rolls are very comforting. Crusty bread rolls are filled with minced beef in a rich and spicy tomato sauce and cheese. They are then warmed in the oven and served.

    Makes: 6 sandwiches

    • 500g minced beef
    • 1 onion, chopped
    • 2 garlic cloves, finely chopped
    • 2 red chillies, seeded and finely chopped
    • 1 (400g) tin chopped tomatoes
    • 1 tablespoon tomato puree
    • 2 tablespoons BBQ sauce
    • 125ml red wine
    • 125ml beef stock
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon sugar
    • 55g grated mature Cheddar cheese
    • 2 tablespoons olive oil
    • salt and cracked pepper to taste
    • 6 large crusty bread rolls

    1. Heat oil in a large frying pan over medium heat until hot. Saute onion, garlic and chillies until soft.
    2. Increase heat and add minced beef. Cook until browned. Add wine and stock; bring to the boil.
    3. Add chopped tomatoes, tomato puree, BBQ sauce, herbs, sugar, salt and pepper.
    4. Bring to the boil, then simmer for about 45 minutes or until the sauce is thickened.
    5. Preheat oven to 190 C / Gas 5.
    6. Slice crusty tops off bread rolls and scoop out the bread from the middle, leaving a thick shell.
    7. Spoon beef mixture into the rolls and top with grated cheese. Replace tops onto the rolls and wrap in foil.
    8. Heat in the preheated oven for 20 minutes.
