Spicy Bacon Potato Skins

    This is a Mexican-inspired appetiser or starter. Baked potatoes are hollowed out, stuffed with cheese, onions, chilli and bacon, baked and served with salsa and soured cream.

    Makes: 18 skins

    • 3 hot baked potatoes, spilt lengthways
    • 90g grated Cheddar cheese with peppercorns
    • 125g finely sliced onions
    • 70g chopped Scotch bonnet chillies or to taste
    • 70g cooked streaky bacon, crumbled
    • mild salsa to serve
    • soured cream to serve

    1. Preheat oven to 180 C / Gas 4. Scoop out inside of potatoes leaving 5mm shells. Reserve inside of potatoes for another use.
    2. Arrange potato halves on baking sheet. Top with cheese, 1/2 the onions, chillies and bacon.
    3. Bake for 15 minutes or until cheese is melted and potato is heated through. Cut each potato half crosswise into thirds. Serve topped with salsa, soured cream and remaining onions.
