Tuna Mornay Sauce

    This is a fantastic pasta sauce, which can also be served with rice. Tuna is simmered in a thick, creamy, cheese-enriched white sauce with sweetcorn and green peppers.

    Serves: 6 

    • 1 (400g) tin tuna in brine, drained
    • 1 1/3 tins sweetcorn with juice
    • 250g mature Cheddar cheese, grated
    • 2 tablespoons plain flour
    • 1 onion, diced
    • 1 tablespoon ground black pepper
    • 1 pinch sea salt
    • 475ml full fat milk
    • 1/4 green pepper, diced
    • 30g butter

    1. Heat butter in a large frying pan until hot. Saute onion and green pepper until the onion becomes translucent.
    2. Turn the heat to medium and add the plain flour. Stir continuously until it thickens, 20-30 seconds. Gradually add the milk, stirring constantly until there are no lumps left. NOTE: The sauce will look very thin at this stage.
    3. Add sweetcorn including the juice, tuna, grated cheese, salt and pepper. Stir. Reduce heat to low. Simmer for 15-20 minutes, stirring every 5 minutes. Serve with rice or pasta.

    The taste of this dish is fantastic. Just a note: make sure you use the cheese that the recipe calls for, as i used low fat cheddar and it did not thicken so well and stuck to the tuna making it a bit chewy. (Not the recipes fault) Very yummy  -  18 Feb 2012  (Review from Allrecipes AU | NZ)
