Place the Cheddar, butter, mustard powder, salt, pepper and brown ale into a heavy-based saucepan. Heat very gently until a creamy mixture is obtained.
Preheat the grill and lightly toast the bread on one side only.
Pour the sauce over the untoasted sides and grill on a tray until golden and bubbly. Garnish with parsley.
