Cheesy Tuna Bake

    This easy weekday meal will be enjoyed by everybody. Tuna and spinach in a cheese sauce is topped with sliced potatoes, soured cream and grated cheese.

    Serves: 4 

    • 60g butter
    • 1 large onion, diced finely
    • 3 tablespoons plain flour
    • 350ml milk
    • 250g frozen spinach, cooked according to packet's instructions
    • 1 egg, lightly beaten
    • 1 (400g) tin tuna in brine, drained
    • cracked pepper to taste (optional)
    • 55g grated mature Cheddar cheese
    • For the Topping
    • 2 large potatoes, cooked and sliced
    • 300ml soured cream
    • grated mature Cheddar cheese as needed

    1. Preheat oven to 180 C / Gas 4.
    2. Gently sweat the onion in butter until translucent, about 10 minutes.
    3. Add flour and cook for 2 minutes. Add the milk gradually, stirring constantly until smooth. Heat until thickened.
    4. Turn the heat down to low. Add egg, cooked spinach, cheese, pepper and tuna. Stir until everything is well combined.
    5. Transfer mixture to a 20x30cm or similar sized baking dish. Arrange the sliced potatoes on top, then spread with soured cream. Scattered with grated cheese.
    6. Bake in preheated oven for about 30 minutes or until golden brown on top.
