Tuna mornay bake

    This hearty meal is cheap and easy to make. Pasta is baked with tuna, sweetcorn and peas in a cheesy white sauce. Enjoy any day of the week.

    Serves: 4 

    • 500g fusilli (spiral) pasta
    • 1 (400g) tin tuna in brine, drained
    • 400g tinned creamed style corn
    • 150g frozen peas
    • 60g butter or margarine
    • 2 tablespoons plain flour or as needed
    • 475ml milk or as needed
    • 1 teaspoon spicy mustard
    • 200g grated mature Cheddar cheese
    • salt and pepper to taste
    • grated mature Cheddar cheese for topping
    • 115g breadcrumbs

    1. Preheat oven to 180 C / Gas 4.
    2. Cook and drain the pasta, then transfer to a large casserole dish. Add the tuna, creamed style corn and peas.
    3. Make the Sauce: In a small pot, melt the butter over gentle heat. Add flour and mix until it becomes a smooth paste.
    4. Add 125ml milk gradually, stirring continuously until smooth. Add the spicy mustard, grated cheese and adjust seasoning as required.
    5. Keep adding the milk slowly, stirring until you have about 475ml sauce.
    6. Pour the sauce over the pasta and gently mix everything together. Sprinkle with additional cheese and breadcrumbs.
    7. Bake for about 20 minutes or until the top is golden brown. Enjoy!

    I liked this and will make it again, although I will probably change a couple of things when I do - eg. use less cheese in the sauce, which was quite gloopy, and add some herbs, maybe parsley.  -  17 Mar 2013
